- Salt and Pepper to taste
- Pinch of Nutmeg
- 1 lb Macaroni
- 2 tbs butter
- 2 tbs flour
- 1½ cups of milk (heated until hot)
- ½ lb sharp cheddar cheese
- ½ lb Monterey Jack Cheese
- ½ cup bread crumbs

Butter a shallow 3qt baking dish, set aside. Cook macaroni in a separate pot and set aside.

In large pot, melt butter, whisk in flour stirring over medium heat for 2 minutes.
Remove pan from heat and slowly whisk in milk a little at a time.
Add the nutmeg, salt and pepper.

Return pan to heat and bring to a boil, whisking constantly.
Turn down heat, let sauce simmer gently for 2 minutes stirring.

Put the macaroni into sauce and use a large metal spoon to fold pasta and sauce together.

Add the cheeses and stir gently.
Transfer Mac and cheese to prepared dish and sprinkle with bread crumbs.

Bake for 25 minutes at 450 degrees or until golden brown on top and bubbling on edges.
